Keep in balance
Unlike when hitting a long shot your weight distribution should remain constant throughout, 70% on your left side.
If you employ the same weight transfer required for a long shot, excess body movement makes it hard to deliver a precise contact. Practise achieving the correct weight distribution at impact by hitting a chip and walking into the finish position.
Alternatively, practice throwing a ball underarm, from your chipping stance, towards a target.

I need a sound pitching technique program to follow. I now hit short pitches one handed.I'm a right handed player so I hit these left handed.I can pitch one handed,but as soon as I put my right hand on the club I'll flip it or hit it fat.I've taken lessons to no avail-I'm almost at the point of quitting. I still shoot in the 70's because of my iron play,but if I miss greens it is amost assuredly a bogey or worse.
